Cover Story: Hemicellulolytic enzymes were incorporated into bread by partially replacing wheat flour with purple corn cob flour to increase fiber content. The enzymatic action positively affected the specific volume, firmness, hardness, and gumminess. Thus, using enzymes enhanced the product's technological properties, adding value to the agro-industrial byproduct.View this paper

and
Rowena J. Field
Abstract Musculoskeletal (MSK) pain is a multifaceted problem, with many contributors. The assessment of these contributions by clinicians has evolved to include not only the musculoskeletal and nervous systems, but also psychosocial contributions. Nutrition, however, has not been considered as a potential contributor in the same way, despite a significant body of evidence showing that amending one’s diet may significantly reduce pain and infl [...] |
Nutrition for Healing Acute and Chronic Wounds: Current Practice, Recent Research Findings, and Insights for Improving CareAbstract Wound prevalence is increasing as the global population ages. Older adults are at risk of wounds from falling and from other medical conditions that contribute to wound development and slowed healing (e.g., diabetes, cancer, chronic infections); they often experience health conditions that necessitate surgery and therefore post-surgical healing. Poor nutrition status, which includes deficiencies in macro- and micronutrients, is recognized as a key contributor to impaired wound healin [...] |

Abstract Bread stands out for its versatility and accessibility, appealing to individuals across various ages and social classes. Consequently, it presents an attractive opportunity for incorporating ingredients that offer health benefits to consumers. In this context, the current study aimed to evaluate the technological properties of sandwich bread (specific volume, water activity, moisture, instrumental color, and texture) prepared with a partial substitution (5% w/w) of wheat flour (WF) w [...] |

Diet and Prevention of Cardiovascular DiseaseAbstract Promoting a healthy diet is an effective strategy for preventing cardiovascular disease (CVD). The characteristics of a healthy diet are known. However, an unhealthy diet has become a significant contributor to the global burden of diseases, mainly due to its effect on CVD, diabetes, and cancer. A healthy diet is not accessible and affordable to most people worldwide. Marketing influences food choices and promotes unhealthy diets that contribute to obesity, CVD, diabetes mellitus, an [...] |

Abstract Epidermolysis Bullosa (EB) is a rare genetic disorder characterized by fragile skin that blisters and tears easily, leading to significant morbidity and mortality. Depending on the specific genetic mutations and the proteins involved, EB can be classified into several subtypes whose molecular complexity is compounded by the variability in mutation types (missense, nonsense, insertions, deletions), their locations within the genes, and the resultant effects on protein function. This s [...] |
